COLA AND LIME TENDER PORK ROAST

Thaw in refrigerator
1. Preheat oven to 350°F., place roast in baking dish, season with salt and pepper, bake uncovered for 1hr - 1hr 15 min. (internal temp. 145°F).
2. Meanwhile, mix glaze ingredients together in bag and pour into small sauce pan. Bring to boil, reduce heat and simmer while whisking occasionally for 15-20 min. until thick and syrupy. Mixture will slightly thicken when cooled. If too thick, stir in a little hot water.
3. Baste roast with glaze 2-3 times during cooking after first 1/2 hr. Let rest 5-10 min. before slicing.
4. Pour remaining glaze over roast or serve on the side.
